Summertime Cocktail

Summertime, and the livin is easy…

It’s got to be 5 o’clock somewhere in the world, time for a Friday summertime cocktail to celebrate the summer & the weekend! Here’s the perfect drink to clink with friends.

We tend to be more cocktail/mixed drink folks than we are beer or wine folks, although, we can hang with either crowd, and do so regularly.

However, our favorite cocktail, is a riff on the traditional Bermudan National Cocktail – the Dark & Stormy.

The traditional Bermudian recipe, from Goslings Rum and is considered their “Signature Drink”.

Ingredients

  • 1.5 oz Gosling’s Black Seal Rum
  • Gosling’s Stormy Ginger Beer

Preparation

In a tall glass filled with ice add 4 – 5 oz of Gosling’s Stormy Ginger Beer and top with Gosling’s Black Seal Rum. Garnish with a lime wedge (optional).

Our Version of the Dark & Stormy

With a few change ups from the Gosling’s recipe, we have found the perfect cocktail for us. Instead of Ginger Beer, we use homemade ginger infused simple syrup. The great thing about the ginger simple syrup is it lasts (refrigerated) for up to a month, and there are many other uses for this nectar of the the gods beyond this recipe.

Ingredients

  • 2oz Goslings Black Seal Rum
  • 1oz Fresh Ginger Simple Syrup – (equal parts sugar, water & chopped ginger root. Bring to boil, let sit 2hrs, strain)
  • Juice of ½ – 1 whole lime
  • Splash Club Soda – to taste – some folks like their drink more sweet (use less club soda), others prefer a lighter drink (use more club soda)

Preparation:

Fill a highball glass half full of ice.
In a second glass, squeeze juice from 1/2 – 1 whole lime (the amount of lime depends on size of lime and your taste preference) and then muddle the lime pulp into the bottom of the glass.
On top of the lime (juice and muddled pulp), add the Goslings Black Seal Rum, the ginger syrup and a splash of club soda.
Pour mixture over the ice in the first glass.

When we were in Jamaica for a wedding a few years back there was not any black Bermudian rum, we made “Light & Unseemlies” with Jamaican Appleton Rum, Jamaican ginger beer and muddled limes right off the plantation citrus trees. Not quite the same, but certainly yummy.
